Newly Appointed Head Chef, Adriana Cavita starts at Peyotito, Notting Hill

The newly appointed Head Chef at Peyotito, Adriana Cavita has spent nearly a decade honing her culinary expertise and love for colourful and mouth-watering Mexican dishes. Having worked at iconic establishments and alongside some of the most notable chefs in the Americas and Europe, Cavita is fast creating a name for herself through her insatiable knowledge of the Mexican gastronomic landscape and her culinary creations. Her dishes let the ingredients speak for themselves combined with a modern and playful delivery.

Born in Mexico City, Cavita’s appetite for cooking runs through her blood. Having a traditional Mexican upbringing, she observed and cooked with her grandmother and aunt who were both excellent cooks. Armed with knowledge and know-how passed from generation to generation, she attained a gastronomic degree from the Universidad Del Claustro de So Juana in Mexico City as well as working at gastronomic institutions including Zefiro and Pujol Restaurant by Enrique Olvera (Mexico City), Térèze at the Hotel Santa Teresa (Rio de Janeiro) and El Bulli by Ferrán Adrià (Girona, Spain).

In 2013, she travelled to the US to become a Chef de Partie at Kinfolk Studio in Williamsburg, (New York) labelled one of the Best New Restaurants of America in 2013 by Bon Appétit. It was at this moment when she received a call from one of Mexico’s top chefs, Eduardo Garcia, having worked with him previously at Pujol, who invited her back to her home city to join him in launching his new restaurant Lalo! It was here that they both realised their symbiotic relationship in the kitchen was second-to-none and they had a strong joint desire to evolve the stereotypical ideals on Mexican cuisine was mutual.

In 2016, Garcia selected Cavita to run the kitchens as Head Chef of a new venture; the soon-to-be local hot-spot of Notting Hill, Peyotito, an opportunity which Cavita jumped at having always wanted to move to London. With an eye for detail, respect for classic ingredients and understanding of Garcia’s refined, memory-making and singular approach to Mexican cooking, Cavita took to running the team of 10 chefs overseeing the preparation of lunch, dinner and weekend brunch. Together they continue to re-invent Mexican dishes, offer seasonal changes and perfect an ever-changing, superfood- packed gluten-free menu, perfect for the epicurean local and international diners of today.

“The cuisine of Peyotito is fresh, modern and flavourful, prepared with love and passion; fundamental ingredients of real modern Mexican cooking!” Adriana Cavita, Head Chef at Peyotito.
