ByRuby, founded by two best friends and talented chefs, Ruby and Milly, is revolutionising the way we eat nationwide as we slowly come out of lockdown. These healthy, frozen meals from ByRuby uses the best fresh ingredients and organic meats, making your work from home, back in the office lunch or mid-week meal that much easier. Earlier this month I had the pleasure of sampling a few of ByRuby’s ‘seriously special’ vegetarian options.

The Experience & The Food

Their Three Bean Chilli made from lentils, quinoa and black beans was packed with loads of flavour. I could taste the variety of seasons from the first spoonful – chilli, cumin, and coriander to name a few. I cooked my chilli in the oven for 30 minutes on gas mark 5 per instructions and ate with a bowl of basmati rice. Very yummy!

The next dish I tried was the Macaroni Cheese. Now, as a passionate mac ‘n’ cheese consumer, I’m always a tad bit trustless when it comes to tasting other people’s mac ‘n’ cheese. Be this as it may, I found ByRuby’s take on this classic dish noticeably tasty with a generous amount of cheddar and parmesan cheese. Extremely creamy which I’m sure many foodies will enjoy; however, for me, it was a bit too creamy for my liking.

The last dish I sampled was the Miso Ramen. This was another dish packed with flavour and spices, with butternut squash and tofu chunks which really hit the spot. Cooking instructions for the oven was between 30-35 minutes on gas mark 5. I kept mine in for about 5 minutes longer than that, and am so glad I did. When I took the dish out of the oven the flavours were bubbling (quite literally) and the broth was nice and hot.

You can purchase one of ByRuby’s readymade meals or bundles directly from their website. They deliver nationwide on Tuesdays, Thursdays, and Fridays.
